Question: Can methionine participate in the formation of disulphide linkages?

No, only the molecule is destroyed. It is  2-amino-4-(methylthio)butanoic acid
The sulfur is  on on side a methyl group and on other side the butanoic acid.
To get S-S groups you need fre HS group like in Cysteine  2-Amino-3-sulfhydrylpropanoic acid or Homocysteine 2-Amino-4-sulfhydrylbutanoic acid.

In methionine, S is thioether linkage and is not very reactive just like ethers.
