If I had a magnet, like the one attached, and I break it, would it form 2 new poles? (like shown in the diagram)

Yes when you break a magnet you will get two new magnets with the North and south pole.
However, as size reduces the strength of the magnet decreases.
A larger magnet will have a stronger magnetic field than a smaller magnet.
